Fava Bean Soup

Sauté white onion in 1 tablespoon olive oil. Season with salt. Stir in chicken stock and bring to a simmer. Add fava beans. Simmer until tender. Stir in Parmesan. Purée. Season with lemon juice, salt, and pepper.

COOK'S NOTES

For most recipes, you’ll have to blanch and peel the fava beans: Remove beans from pods, and cook in a pot of salted boiling water for 2 minutes. Drain, and run under cold water. Remove the skins.

  • 1 1/2 cups chopped white onion
  • Extra-virgin olive oil
  • Salt and pepper
  • 2 1/2 cups chicken stock
  • 2 1/2 cups blanched, peeled fava beans
  • 1/4 cup grated Parmesan
  • Lemon juice, for serving
