Sauté white onion in 1 tablespoon olive oil. Season with
salt. Stir in chicken stock and bring to a simmer. Add
fava beans. Simmer until tender. Stir in Parmesan. Purée.
Season with lemon juice, salt, and pepper.
For most recipes, you’ll have to blanch and peel the fava
beans: Remove beans from pods, and cook in a pot of salted
boiling water for 2 minutes. Drain, and run under cold
water. Remove the skins.
