Saute leek in butter. Add fava beans and chicken stock. Simmer for 1 minute. Stir in heavy cream. Simmer for 2 minutes. Season with lemon juice, salt, and pepper. Serve on chicken.
Preparing fava beans: For most recipes, you’ll blanch and peel the beans: Remove beans from pods, and cook in a pot of salted boiling water for 2 minutes. Drain, and run under cold water. Remove the skins.
